Korean food agency compares popular spicy fish stews
A comparison of eight types of Korean spicy fish stew, known as maeuntang, shows that nutritional values can vary significantly depending on the seafood used. The analysis used data from the Food and Drug Safety Ministry’s Food Nutrition Database and compared calories, carbohydrates, protein, fat, sugar and sodium levels based on 100 grams.
Cod stew has the fewest calories, while flatfish stew has the most protein
Among the eight varieties examined — cod, seafood, flatfish, catfish, fish scraps, monkfish, rockfish and yellow corvina — cod maeuntang had the lowest calorie count at 22 kilocalories per 100 grams. Fish scraps stew followed with 30 kilocalories, while seafood stew had 35 kilocalories.
Flatfish stew recorded the highest calorie level at 70 kilocalories, followed by rockfish at 68 kilocalories, catfish at 67 kilocalories and yellow corvina at 64 kilocalories.
For protein, flatfish stew ranked highest at 9.74 grams per 100 grams. Rockfish stew followed with 8.69 grams and monkfish stew with 6.85 grams. The lowest protein levels were found in fish scraps stew at 4.02 grams and cod stew at 4.49 grams.
Sodium levels vary depending on the seafood choice
Fish scraps stew had the lowest sodium content among the eight varieties, with 189 milligrams per 100 grams. Cod stew followed at 250 milligrams.
The highest sodium levels were found in yellow corvina stew at 379 milligrams, followed by seafood stew at 368 milligrams and monkfish stew at 345 milligrams. Rockfish, flatfish and catfish stews ranged from 296 to 310 milligrams.
Carbohydrates and fat also differ by recipe
Catfish stew contained the highest carbohydrate level at 8.1 grams per 100 grams, while cod stew had the lowest at 0.19 grams. Fish scraps stew was also low at 0.63 grams.
Yellow corvina stew had the highest fat content at 3.23 grams, followed by rockfish at 2.84 grams and flatfish at 2.77 grams. Cod stew contained the least fat at 0.4 grams. Sugar levels were lowest in cod and fish scraps stews, both recording zero grams, while catfish stew had the highest sugar content at 0.95 grams.
Choosing a stew based on dietary goals
For people looking for lower-calorie options, cod, fish scraps and seafood stews ranked among the lighter choices. Those monitoring sodium intake may prefer fish scraps or cod stew, while those seeking higher protein levels may consider flatfish, rockfish or monkfish varieties.
The comparison highlights how a familiar Korean comfort food can have different nutritional profiles depending on the main ingredient. The figures are based on 100-gram servings recorded in the Food Nutrition Database from research years 2013 to 2022.
