South Korea's Ministry of Food and Drug Safety is highlighting three low-sodium recipes designed to preserve flavor while reducing salt: carbonara gnocchi, pumpkin porridge and a rice-burger dish served with Korean-style grilled meat patties. The recipes offer practical ways to cut sodium through ingredient preparation and seasoning choices rather than sacrificing taste.

Carbonara gnocchi: Blanching bacon to reduce sodium

The creamy gnocchi dish uses mashed potatoes shaped into small dumplings and served in a sauce made with milk, heavy cream, onions, mushrooms and bacon. Its key sodium-reduction technique is briefly blanching the bacon before cooking it with garlic. One serving contains 351.9 calories and 347.2 milligrams of sodium, along with 29.1 grams of carbohydrates, 13.2 grams of protein and 20.3 grams of fat.

Pumpkin porridge: Toasted brown rice adds flavor

This Korean-style pumpkin porridge combines sweet pumpkin, glutinous rice flour, broccoli and onion. Rather than relying heavily on salt, the recipe uses a small amount of mushroom-garlic salt and cheese powder for seasoning. Toasted brown rice adds a nutty flavor and texture. One serving provides 150.1 calories and just 101.4 milligrams of sodium, as well as 26.8 grams of carbohydrates, 5.6 grams of protein and 2.3 grams of fat.

Rice burger with grilled meat patties and tomato salad

The third recipe pairs a rice-based burger with grilled patties made from ground beef and pork. A fresh salad of tomatoes, water parsley and green and red chili peppers replaces the more conventional salted cabbage accompaniment. The dish also uses seasoned soy sauce, which has a lower salt concentration than regular soy sauce. One serving contains 206.2 calories, 206.1 milligrams of sodium, 28.3 grams of carbohydrates, 12.4 grams of protein and 4.8 grams of fat.

Together, the three recipes demonstrate different approaches to reducing sodium: blanching bacon, using toasted grains and flavor-rich seasonings, and choosing fresh vegetables and lower-salt sauces. The nutritional figures are provided per serving in the ministry's public recipe collection.
